The Perfect Serve: How to Serve NOCTURNE Carajillo

NOCTURNE Carajillo poured into a chilled coupe glass with a layer of foam

Start Cold

Everything below assumes one thing: the can is properly chilled before it is opened. It is built to be served cold, and no technique recovers a warm serve. Cold storage is the whole preparation.

From there, three serves, plus one technique worth avoiding.

The Perfect Serve

Dry shake, pre-chilled coupe.

Pour into a shaker with no ice, shake, and strain into a coupe that has been chilled in advance.

The dry shake is what makes this the serve we recommend. Shaking without ice aerates the drink without diluting it, which builds the pale collar of foam that has always been the visual signature of a well-made Carajillo. Pouring into a pre-chilled coupe keeps the drink cold without introducing a single ice cube, so the last sip tastes like the first.

It takes about fifteen seconds, and it is the version of NOCTURNE we would want a guest to meet first.

Over Ice

Dry shake, rocks glass.

Same dry shake, then pour over ice in a rocks glass.

This is the serve for a terrace at midday, a beach club, or anywhere a drink needs to survive longer than a coupe allows. You keep the foam from the dry shake and gain holding power. Dilution is slower than it would be in a shaken-with-ice drink, because the ice only starts working after the drink is built.

Straight From the Can

Chilled, no preparation.

Serve the can cold and open it. That is the entire method.

NOCTURNE is a ready-to-drink product, formulated to be complete before anyone reaches for a shaker. That is precisely the point for poolside service, room service, events, and any setting where a shaker is not practical.

Why We Don’t Recommend a Wet Shake

Shaking NOCTURNE with ice, a wet shake, is the one technique we advise against.

The drink already arrives at its intended strength and balance. Shaking with ice adds water, and water thins the coffee first. The body drops, the roast character flattens, and the finish shortens. Whatever you gain in temperature costs you more than it returns.

If your bar prefers the wet shake regardless, keep it to a maximum of two cubes, roughly 45 grams of ice, and serve immediately.

For Venues

The reason to standardise on one serve is consistency. A dry shake into a pre-chilled coupe produces the same drink at 11pm on a Saturday as it does at 4pm on a Tuesday, from any member of staff, with no measuring, no build, and no espresso machine in the chain.

That is the operational case for a premium RTD Carajillo. Cocktail-quality presentation, at service speed, without variance between bartenders.

Venues interested in offering NOCTURNE are welcome to get in touch.
